Delicious Pumpkin Bread

Due to a lack of inspiration, I'm once again falling back to my dear sister's blog and pulling one of my favorite recipes from her archives. Be sure to check out Who Needs Eggs? for more wonderful sweets and treats and tips!

Even though it's not fall, who says that pumpkin is only reserved for the chilly, later months of the year? My sister's original recipe called for chocolate chips alongside the raisins in this sweet bread, but for understandable reasons, I omitted the chips when I copied the recipe. Personally, I love this bread thick with raisins and craisins. 

Pumpkin Bread

1 3/4cups flour
1 1/2 cups sugar
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon pumpkin pie spice
1/2 cup oil
3 teaspoons Ener-G Egg Replacer + 4 tablespoons water
1/3 cup water
1 cup pumpkin
1/2 cup raisins
1/2 cup craisins

Preheat oven to 350°
Grease a bread pan and sprinkle cinnamon and sugar on the bottom and sides of the pan.
In a small bowl, stir together Ener-G Egg Replacer and water.
In a large bowl, sift together flour, sugar, baking soda, salt, and spices. 
Add oil, water, pumpkin, and egg replacer mixture. 
Stir in raisins and craisins. 
Pour into prepared pan. 
Sprinkle the top with cinnamon sugar. 
Bake for 50-60 minutes.
